Ingredients
- 1 cup unsalted butter (softened)
- 1 ½ cups granulated sugar
- 2 large eggs
- ⅓ cup tahini
- 2 ¾ cups all-purpose flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- ½ tsp salt
- 2 tsp cinnamon (for rolling)
- 3 tbsp sugar (for rolling)
You'll need
- ·Stand mixer or hand mixer
- ·Baking sheets
- ·Parchment paper
- ·Small saucepan
- ·Mixing bowls
- ·Cookie scoop
- ·Wire cooling rack
Instructions
- 1
Beat butter and 1½ cups sugar until light and fluffy, about 3 minutes. Add eggs one at a time.
- 2
Drizzle in tahini and mix until just combined — you want streaks, not fully incorporated.
- 3
Whisk together flour, cream of tartar, baking soda, and salt. Fold into butter mixture.
- 4
Chill dough 30 minutes. Preheat oven to 375°F.
- 5
Mix cinnamon and sugar in a small bowl. Scoop dough into balls and roll in cinnamon sugar.
- 6
Bake 10–12 minutes until edges are set. Centers will look underdone — that's perfect. Cool on pan 5 minutes.
