Ingredients

  • 1 ½ cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar (crust)
  • 16 oz full-fat cream cheese (2 blocks), softened
  • 5 oz sweetened condensed milk
  • ½ cup sour cream
  • ¾ cup heavy cream, whipped to medium-firm peaks
  • 5 tbsp powdered sugar, sifted
  • ½ tsp lemon juice
  • 1 tsp vanilla extract
  • 1 pinch pinch of salt
  • 2 ½ tsp beef gelatin (e.g. Fat Stone) — or 2 tsp Knox pork gelatin
  • 3 tbsp cold water (for blooming gelatin)
  • ½ cup granulated sugar (strawberry glaze)
  • ½ cup water (strawberry glaze)
  • 1 tbsp light corn syrup (or 1 tbsp honey)
  • 3 tsp unflavored gelatin, bloomed in 3 tbsp cold water (glaze)
  • 1 pint fresh strawberries, for topping

You'll need

  • ·8–9 inch springform pan
  • ·Stand mixer or hand mixer
  • ·Mixing bowls
  • ·Spatula
  • ·Whisk
  • ·Small microwave-safe bowl
  • ·Small saucepan (for glaze)
  • ·Pastry brush (for glaze)

Instructions

  1. 1

Make the crust: mix graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press firmly into the bottom and slightly up the sides of an 8–9 inch springform pan. Freeze for 15–20 minutes while you prepare the filling.

  2. 2

Bloom the gelatin: sprinkle beef gelatin over 3 tbsp cold water in a small bowl. Let stand 5–10 minutes until it absorbs the water and turns spongy. Warm gently in the microwave for 10–12 seconds until clear and fully liquid. Let cool 2–3 minutes — it should be warm but not hot before adding to the filling.

  3. 3

Whip the heavy cream to medium-firm peaks and refrigerate until needed.

  4. 4

In a large bowl, beat the softened cream cheese until completely smooth with no lumps. Gradually add the condensed milk and mix until combined. Add sour cream, powdered sugar, lemon juice, vanilla, and salt. Mix until smooth.

  5. 5

With the mixer on low, slowly drizzle the warm (not hot) melted gelatin into the cream cheese mixture in a thin, steady stream. Mix until fully incorporated.

  6. 6

Gently fold the whipped cream into the filling using a spatula until fully combined and no white streaks remain. Work carefully to keep the mixture light and airy.

  7. 7

Pour the filling into the prepared crust and smooth the top with an offset spatula. Cover tightly and refrigerate for at least 6 hours, preferably overnight. The longer it chills, the cleaner the slice.

  8. 8

Make the strawberry glaze (optional): combine sugar, water, and corn syrup in a small saucepan and bring to a gentle simmer. Remove from heat and whisk in bloomed gelatin until completely smooth. Cool 3–5 minutes until warm and pourable but not hot. Brush or dip strawberries and refrigerate 10–15 minutes to set before arranging on the cheesecake. For a honey variation, substitute 1 tbsp honey for the corn syrup — it sets a little slower and may need a second coat, but gives a lovely natural shine.

  9. 9

To serve, run a warm knife around the inside edge of the pan before releasing the springform ring. Wipe the knife clean between cuts for bakery-style slices. If your cheesecake ever starts to slump before chilling, don't panic — scoop it back, bloom a little extra gelatin, remix, and chill again.
