10 cookies · ~220 cal each · ~2200 cal total
Ingredients
- ½ cup unsalted butter (softened)
- ⅔ cup granulated sugar
- 2 large eggs
- 3 medium yellow bananas (not overripe), mashed
- ½ tsp vanilla extract
- ¼ tsp almond extract
- ¼ tsp banana extract (optional, if bananas aren't very ripe)
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ cup cognac-soaked cherries (drained, chopped, lightly tossed in flour)
- ½ cup semisweet chocolate chips
You'll need
- ·Stand mixer or hand mixer
- ·Baking sheets
- ·Parchment paper
- ·Small saucepan
- ·Mixing bowls
- ·Cookie scoop
- ·Wire cooling rack
Instructions
- 1
Preheat oven to 325–350°F (use 325°F for a glass pan). Grease a 9x5 loaf pan or line with parchment.
- 2
Cream butter and sugar together until light and fluffy, about 2–3 minutes.
- 3
Add eggs one at a time and mix to combine.
- 4
Mash bananas with a fork, leaving a little texture. Add to the batter along with vanilla and almond extract (and banana extract if using). Mix until just combined.
- 5
In a separate bowl, whisk together flour, baking soda, and salt. Add dry ingredients to wet ingredients and mix until just combined — do not overmix.
- 6
Drain the cognac-soaked cherries very well and lightly toss them in a little flour so they don't sink. Fold the cherries and chocolate chips into the batter.
- 7
Pour batter into the prepared loaf pan. Bake 55–65 minutes, until a toothpick inserted in the center comes out with moist crumbs (not wet batter). If the top browns too quickly, loosely tent with foil and continue baking.
- 8
Let cool in the pan for 10–15 minutes, then transfer to a wire rack. Cool completely before slicing for the cleanest cuts.
